Chicken Tostadas

I came home last night and started on dinner, 20 mins later it was on the table and the kitchen counters were clean with only half a dozen dishes in the sink.

Me: "Dinner's ready!"

IKF: "What? Already?... Whoa, how did the kitchen not get dirty?"

Here is the secret recipe that was ready in two blinks of a lambs eye and made barely a mess... (Not to mention it was delicious and healthy too.)

Fancy Chicken (or Salmon) Tostadas

8 corn tortillas
cooking spray
1 can reduced fat refried black beans
3 Tbsp low fat sour cream
2 Tbsp salsa, from a jar, I tend to favor Pace Chunky Medium
2 scallions (aka green onions) chopped up... the whole thing, green bits, white bits
1 can shredded white meat chicken, drained, fluffed with a fork
1 avocado, diced
1 or 2 Tbsp diced pickled jalapenos (depending on preferred spiciness)
2 c. shredded cabbage
2 - 3 Tbsp chopped fresh cilantro
2 Tbsp juice from pickled jalapeno jar
Lime wedges

1. Preheat oven to 325. Spread corn tortillas on two cookie sheets spray both sides with non-stick cooking spray. Bake for 6 minutes, flip them over, then bake for 6 mintues more.

2. Meanwhile, empty beans, sour cream, salsa and scallions into a microwaveable bowl and stir until well combined. Heat in the microwave on high for 2 mins. This is the bottom layer.

3. In another bowl, combine chicken, avocado and jalapenos. This is the second layer. (If you really dig that avocado flavor, only use half to two-thirds of the can of chicken. That will allow the avocado to take over.)

4. Toss together cabbage, cilantro and pickling juice in another bowl. This is the top layer.

5. When the tortillas are cool enough to touch, smooth a layer of beans onto each crispy little disc, follow with a smear of chicken mixture and then a sprinkle of cabbage mixture. You can baby your dinner guests and do this part for them, or do what I did and throw all of the bowls on the table and say, help yourself. Serve with lime wedges.

Mmmmm. The good news is we have leftovers which I plan to turn into a burrito for lunch today.

(Also... this recipe can be done with canned salmon instead of canned chicken, if you like that sort of thing.)

  1. We had burritos last night (cause they're so darn EASY!) but to put a little spin on easy I am excited about this little recipe!
